I will be the first to admit that I am not a recipe kinda gal. I’m more of an ingredients list kinda gal and it drives my very precise husband nuts. Poor thing married a gal who is typically pretty type-A except for when it comes to cooking. It drives my friends nuts too when they ask for a recipe and I can only give them ingredients and an estimate of what was used. If it weren’t for baking my measuring cups would never get used.
But. this my friends is such an easy meal it doesn’t feel right to call this a recipe. More like a collection of ingredients and tips to make something oh-so-easy, but oh-so-good.
And because I hate it when I’m looking for a recipe (really just to look at the ingredients list) and I have to scroll through 10 million paragraphs of the blog before I get to the recipe here it is!
Roasted Summer Sausage & Veggies
This easy meal is thrown together quickly and makes for a delicious low effort meal on nights that you just don't feel like cooking!
- 1 Large Sweet Onion
- 2 Large Zucchini
- 1.5 lb Red Potatoes ((about 5-6 larger red potatoes will do))
- 1 lb Brussel Sprouts
- 1 package Precooked Smoked Sausage ((we like using jalepeno sausage to give it a kick))
- 3 tbsp Olive Oil or Bacon Grease ((we typically use bacon grease in savory meals, but olive oil works just as well))
- 2 tsp Farm Dust Seasoning
Preheat your oven to 400 degrees
Chop all your veggies to roughly the same size. They don't have to look pretty, we just want them around the same size so that they all cook together and finish around the same time.
Throw all your veggies together and coat them with your seasoning.
Add the bacon grease (or olive oil) to the sheet pan, and then pour your veggies on top, making sure they are well spread out. Cook your veggies for about 30 minutes or until they start to brown a little.
While the veggies are in the oven begin slicing up your precooked sausage and add it to the sheet pan for the last 15 minutes or so of baking.
Once the sausage starts to brown and is heated through you are ready to pull it out of the oven and serve.
Enjoy!
